Cudeman Ibérico Trimming Knife: The indispensable tool to begin the ritual

Cleaning and preparing an Iberian ham requires a level of power and control that a flexible ham slicer cannot deliver. The Cudeman 703-B Ibérico trimming knife was designed specifically for this critical phase: removing the rind and the yellowed outer fat safely and efficiently. This piece combines the toughness needed to tackle the hardest parts of the ham with an ergonomic design that lets you work with force without compromising cutting precision.

Why this Cudeman is right for you

  • Breakdown power: Its 17 cm blade provides the ideal leverage to remove hardened rind with minimal effort.
  • Safety-oriented geometry: The wide, sturdy blade lets you apply pressure in a controlled way, avoiding accidental skips.
  • Professional hygiene: The choice of materials guarantees deep cleaning, vital when in direct contact with meat products and fats.
  • Balanced weight: At 185 grams, the knife feels solid in the hand, conveying the sensation of a professional tool ready for hard work.

Steel and edge performance

For this trimming knife we have trusted molybdenum-vanadium steel, an alloy that stands out for its toughness and excellent resistance to oxidation. At 54-56 HRC, this steel is built to take punishment; it allows the aggressive cut needed to get through cured skin while also making resharpening quick and simple. You can expect consistent performance, with an edge that takes the impact of the driest rind without chipping easily.

Construction and strength

This model's structure is focused on mechanical strength. As the workhorse companion to the ham carving knife (701-B), the Ibérico trimming knife withstands the lateral stresses typical of rind removal. It is a tool designed to cut and clean, so although it is extremely robust, we recommend not using it to strike bones directly or for hatchet work, preserving the geometry of its edge for optimal performance for years to come.

Handle and control in real conditions

Handling a trimming knife means applying force in environments where ham fat is everywhere. That is why the white Micarta handle with red liner is not just an aesthetic choice; this material provides exceptional grip that never turns slippery with moisture or oil. The Micarta is anchored to the blade with blind rivets, leaving a smooth, elegant surface. Its ergonomic 13.4 cm design allows a full-hand grip, ensuring absolute control over the tip and edge even when extra push is required.

Use cases

  • Pre-carving preparation: Ideal for removing the rind and excess fat from hams and shoulders quickly and cleanly.
  • Cleaning cured pieces: Perfect for profiling the ham and leaving it ready for slicing, removing outer impurities.
  • Butcher and deli use: A versatile tool for professionals who need a strong support knife for quick breakdown work.

Care and maintenance

  • Hand wash immediately after use with warm water and dry with a cloth to prevent the buildup of organic fats.
  • Store in a dry place, away from ambient humidity, to keep the Micarta's shine and the steel's integrity.
  • Hone the edge regularly with a medium-grit stone or honing steel so trimming always takes the least possible effort.

The Cudeman Ibérico trimming knife (703-B) is the perfect squire in the art of carving. A reliable tool, designed to Albacete standards and built to last in the most demanding kitchens.

Frequently Asked Questions

Popular questions from our customers

  • Every Cudeman product is designed and made entirely in Albacete, Spain. The brand has more than 38 years of experience, combining the traditional craftsmanship of Albacete cutlery with the latest technology (such as laser cutting and CNC machining). When you buy a Cudeman, you are getting a product with a designation of origin that guarantees quality and know-how.

  • 1. Premium steels: Böhler N695 / N690Co

The benchmark steels in our high-end range. Böhler stands for purity and Austrian engineering.

    • Properties: High hardness (58/61 HRC), excellent corrosion resistance and superior edge retention thanks to their high chromium and cobalt content (in the case of N690Co).
    • Best for: Extreme survival and bushcraft knives (such as the famous MT series or the Boina Verde), built to withstand heavy use without losing their edge.

    2. The gold standard: Molybdenum Vanadium (MoVa)

The quintessential steel of Spanish cutlery, prized for its excellent structural balance.

    • Properties: Reaches 54/56 HRC. Its greatest strengths are toughness (impact resistance) and how easy it is to resharpen in the field, even with basic stones.
    • Best for: Hunting, dispatch and general-purpose knives. The all-terrain steel that never lets you down in the field.

    3. Swedish precision: Sandvik 12C27 / 14C28N

Very fine-grained stainless steels made in Sweden, ideal for anyone after a razor-sharp edge.

    • Properties: 14C28N in particular offers a masterful balance between hardness (57/59 HRC) and corrosion resistance. It takes very keen edges that resist micro-chipping.
    • Best for: High-end pocket knives (EDC), adventure knives and pieces that call for a clean, precise cut.

    4. Tactical toughness: 420 stainless steel

A very resilient steel that stands up to the elements, used for specific high-impact pieces.

    • Properties: Lower hardness than the steels above (50/53 HRC), which makes it extremely resistant to breaking under torsion or impact. It is virtually rust-proof.
    • Best for: Throwing knives, diving tools and low-maintenance tactical knives.
  • A high-quality knife is a tool for life, but how long it lasts depends on how you look after it, especially when technical steels are combined with natural handle materials.

    1. Cleaning and drying (essential for natural materials)

    • Wash by hand: Clean the blade and handle with warm water and mild soap. Never use the dishwasher: extreme heat and harsh detergents are lethal to steel and wood.
    • Mind the porosity: If your Cudeman has wood, antler or bone scales, avoid submerging or soaking them. These materials are porous; moisture can make them swell, crack or come away from the knife frame.
    • Dry immediately: Dry the whole knife with a soft cloth straight after washing. Make sure no moisture is left around the rivets or joints.

    2. Lubrication and protection

    • The blade: If you are going to store the knife, apply a thin coat of mineral oil (or camellia oil) to the steel. This creates a water-repellent barrier against ambient humidity, which matters even with stainless steels.
    • The handle: For natural wood handles, apply a little linseed oil or beeswax from time to time. It nourishes the material, seals the grain and stops it drying out or accidentally absorbing water.

    3. Storage and leather sheaths

    • Leather is organic: Leather sheaths absorb moisture. Don't store the knife inside its sheath for long periods of inactivity, as the leather tanning and trapped moisture can cause pitting on the steel.
    • Sheath care: Condition the leather regularly with horse grease or a dedicated leather cream. A supple, well-conditioned sheath protects your tool better and keeps the leather from cracking over time.

Golden rule: A Cudeman knife isn't ruined by use, but by neglect. Clean it, dry it and store it separately if you won't be using it soon.

  • Cudeman offers a lifetime warranty against any manufacturing or material defect.

Important: The warranty does not cover natural wear from use, or damage caused by misuse of the tool (such as extreme batoning with models not designed for it, throwing the knife or using it as a pry bar).
Items made with natural materials (wood, antler) or special resins (Juma) may show inherent differences in grain and colour compared with the photos. These cosmetic variations are not a manufacturing defect and are therefore not covered by the warranty or eligible for return.
