Cudeman Professional Ham Carving Set: the complete Iberian carving ritual in 3 pieces
Carving an Iberian ham is not just a technique, it is a ritual that begins long before the first slice. With the Cudeman Complete Ham Carving Set you receive the three tools a master carver needs to treat the ham with the respect it deserves: trim, debone and slice with the precision of a workshop that has been making knives in Albacete for over 38 years.
Three pieces, one philosophy: technical steel, white Micarta handle with red liner, full tang construction and an in-hand balance designed for long sessions without fatigue.
What the Cudeman Ham Carving Set includes
1. 703-B Trimming Knife · The first cut
This is the piece that opens the ham. Its sturdy 17.1 cm molybdenum-vanadium steel blade (54-56 HRC), 2.6 mm thick, is designed to remove rind, yellowed fat and outer grease effortlessly. At 185 g it provides the leverage needed to attack the hardest areas of the ham without the edge skipping.
2. 702-B Boning Knife · Access to the deep areas
Once the ham is clean, it is time to contour the bone. The 13.3 cm paring-style blade in molybdenum-vanadium steel penetrates joints and hard-to-reach areas (femur, hip, hoof) with surgical precision. Its narrow, piercing profile minimizes waste and prepares the ham so every subsequent slice glides through unobstructed.
3. 701-B Ham Carving Knife · The perfect slice
The star of the set. A flexible 25.7 cm Sandvik 12C27 steel blade (59-60 HRC) with non-stick granton dimples so each slice releases on its own. Its geometry delivers absolute thickness control and a translucent, even slice with no tearing of the lean meat. The Swedish precision of Sandvik steel keeps the laser-sharp edge through several hams before it needs honing.
The carving process step by step
- Trim (703-B): remove the hard rind and the yellowed outer fat.
- Profile: expose the area where you will start slicing.
- Partially debone (702-B): contour the hip and bridge bone to clear the way.
- Slice (701-B): cut thin slices parallel to the ham, letting the steel do the work.
- Turn the ham and repeat the cycle once you finish the top face.

All pieces share: full tang construction, a white Micarta handle with red liner, blind inner rivets and a satin finish.
Why choose the set over the individual pieces
- Save almost €9 compared with buying the 3 pieces individually.
- A coordinated set: same finish, same handle, same technical philosophy.
- The complete kit a master carver needs from the first cut to the last.
- An ideal gourmet gift for Iberian ham lovers, corporate events or hospitality professionals.
- Optional personalized laser engraving on the blade (+€5).
Materials designed for contact with ham
The white Micarta with red liner is not an aesthetic choice. This composite material is completely non-porous: it absorbs no fat or odors, keeps a firm grip even when your hand is coated in the natural oil of Iberian ham, and withstands intensive use in professional kitchens. The combination of Sandvik steel in the slicer (for an extreme edge) and molybdenum vanadium in the trimming and boning knives (for toughness and easy resharpening) matches the real-world use of each piece.

Every Cudeman product is designed and made entirely in Albacete, Spain. The brand has more than 38 years of experience, combining the traditional craftsmanship of Albacete cutlery with the latest technology (such as laser cutting and CNC machining). When you buy a Cudeman, you are getting a product with a designation of origin that guarantees quality and know-how. -
1. Premium steels: Böhler N695 / N690Co
The benchmark steels in our high-end range. Böhler stands for purity and Austrian engineering.
- Properties: High hardness (58/61 HRC), excellent corrosion resistance and superior edge retention thanks to their high chromium and cobalt content (in the case of N690Co).
- Best for: Extreme survival and bushcraft knives (such as the famous MT series or the Boina Verde), built to withstand heavy use without losing their edge.
2. The gold standard: Molybdenum Vanadium (MoVa)
The quintessential steel of Spanish cutlery, prized for its excellent structural balance.
- Properties: Reaches 54/56 HRC. Its greatest strengths are toughness (impact resistance) and how easy it is to resharpen in the field, even with basic stones.
- Best for: Hunting, dispatch and general-purpose knives. The all-terrain steel that never lets you down in the field.
3. Swedish precision: Sandvik 12C27 / 14C28N
Very fine-grained stainless steels made in Sweden, ideal for anyone after a razor-sharp edge.
- Properties: 14C28N in particular offers a masterful balance between hardness (57/59 HRC) and corrosion resistance. It takes very keen edges that resist micro-chipping.
- Best for: High-end pocket knives (EDC), adventure knives and pieces that call for a clean, precise cut.
4. Tactical toughness: 420 stainless steel
A very resilient steel that stands up to the elements, used for specific high-impact pieces.
- Properties: Lower hardness than the steels above (50/53 HRC), which makes it extremely resistant to breaking under torsion or impact. It is virtually rust-proof.
- Best for: Throwing knives, diving tools and low-maintenance tactical knives.
-
A high-quality knife is a tool for life, but how long it lasts depends on how you look after it, especially when technical steels are combined with natural handle materials.
1. Cleaning and drying (essential for natural materials)
- Wash by hand: Clean the blade and handle with warm water and mild soap. Never use the dishwasher: extreme heat and harsh detergents are lethal to steel and wood.
- Mind the porosity: If your Cudeman has wood, antler or bone scales, avoid submerging or soaking them. These materials are porous; moisture can make them swell, crack or come away from the knife frame.
- Dry immediately: Dry the whole knife with a soft cloth straight after washing. Make sure no moisture is left around the rivets or joints.
2. Lubrication and protection
- The blade: If you are going to store the knife, apply a thin coat of mineral oil (or camellia oil) to the steel. This creates a water-repellent barrier against ambient humidity, which matters even with stainless steels.
- The handle: For natural wood handles, apply a little linseed oil or beeswax from time to time. It nourishes the material, seals the grain and stops it drying out or accidentally absorbing water.
3. Storage and leather sheaths
- Leather is organic: Leather sheaths absorb moisture. Don't store the knife inside its sheath for long periods of inactivity, as the leather tanning and trapped moisture can cause pitting on the steel.
- Sheath care: Condition the leather regularly with horse grease or a dedicated leather cream. A supple, well-conditioned sheath protects your tool better and keeps the leather from cracking over time.
Golden rule: A Cudeman knife isn't ruined by use, but by neglect. Clean it, dry it and store it separately if you won't be using it soon.
-
Cudeman offers a lifetime warranty against any manufacturing or material defect.
Important: The warranty does not cover natural wear from use, or damage caused by misuse of the tool (such as extreme batoning with models not designed for it, throwing the knife or using it as a pry bar).
Items made with natural materials (wood, antler) or special resins (Juma) may show inherent differences in grain and colour compared with the photos. These cosmetic variations are not a manufacturing defect and are therefore not covered by the warranty or eligible for return.
