Cudeman Ibérico Boning Knife: Anatomy and precision for perfect deboning

In the ritual of carving ham, reaching the inner areas and contouring around the bones calls for a surgical tool. The Cudeman Ibérico boning knife (702-B) was designed with a narrow, piercing profile to reach where conventional knives stop. It is the key piece for cleanly releasing the lean meat from the bone, minimizing waste and ensuring every subsequent slice glides through unobstructed.

Why this Cudeman is right for you

  • Unlimited access: Its 13 cm blade is exactly the right size to enter the joints and work around the femur or hip bone with agility.
  • Precision geometry: The paring-style design allows tight turns and circular cuts with an accuracy that protects the quality of the ham.
  • Hygiene and safety: When working deep inside the meat, its Micarta handle provides an antibacterial barrier and firm control.
  • Fits the professional set: It shares the look and materials of our haute cuisine line, completing the master carver's kit.

Steel and edge performance

This boning knife uses molybdenum-vanadium steel, a technical choice that prioritizes fatigue resistance and easy maintenance. In boning tasks the edge often brushes accidentally against hard surfaces; this steel allows constant, simple resharpening, always keeping a functional tip and an incisive cut. You can expect a tool that holds its integrity against moisture and meat juices thanks to its excellent alloy composition.

Construction and strength

Despite its slim appearance, the Ibérico boning knife (702-B) has a structural solidity that inspires confidence with every insertion. The transition between blade and handle is designed to withstand the pressure needed to separate fibrous tissue. It is, however, a precision cutting tool; it is not made for extreme lateral prying between bones or for cracking hard pieces, since its purpose is clean gliding and separation.

Handle and control in real conditions

Deboning work demands a total connection between the hand and the tip of the blade. The white Micarta handle with red liners offers an ergonomic shape that molds to the palm, allowing either a stiletto-style or a power grip with the same security. The scales are anchored with blind rivets so the surface looks smooth, elegant and comfortable in the hand.

Use cases

  • Bone separation (maza and contramaza): Essential for contouring the bridge bone and letting the ham slicer work flat.
  • Cleaning hard-to-reach areas: Perfect for removing excess fat or tissue in tight spots near the hoof or the hip.
  • Use as a kitchen paring knife: Its versatility makes it an excellent utility knife for trimming meat and poultry in general.

Care and maintenance

  • Wash with water and a mild soap after each working day, making sure no organic residue remains around the liner area.
  • Dry thoroughly with a dry cloth and store away from moisture to preserve the brightness of the white Micarta.
  • Keep the tip sharp at all times; it is this model's most important feature for effortless deboning.

The Cudeman Ibérico boning knife (702-B) is the technical answer to the demand for precision in fine charcuterie. A reliable tool, made in Albacete, for those who refuse to settle for an approximate cut.

Popular questions from our customers

  • Every Cudeman product is designed and made entirely in Albacete, Spain. The brand has more than 38 years of experience, combining the traditional craftsmanship of Albacete cutlery with the latest technology (such as laser cutting and CNC machining). When you buy a Cudeman, you are getting a product with a designation of origin that guarantees quality and know-how.

  • 1. Premium steels: Böhler N695 / N690Co

The benchmark steels in our high-end range. Böhler stands for purity and Austrian engineering.

    • Properties: High hardness (58/61 HRC), excellent corrosion resistance and superior edge retention thanks to their high chromium and cobalt content (in the case of N690Co).
    • Best for: Extreme survival and bushcraft knives (such as the famous MT series or the Boina Verde), built to withstand heavy use without losing their edge.

    2. The gold standard: Molybdenum Vanadium (MoVa)

The quintessential steel of Spanish cutlery, prized for its excellent structural balance.

    • Properties: Reaches 54/56 HRC. Its greatest strengths are toughness (impact resistance) and how easy it is to resharpen in the field, even with basic stones.
    • Best for: Hunting, dispatch and general-purpose knives. The all-terrain steel that never lets you down in the field.

    3. Swedish precision: Sandvik 12C27 / 14C28N

Very fine-grained stainless steels made in Sweden, ideal for anyone after a razor-sharp edge.

    • Properties: 14C28N in particular offers a masterful balance between hardness (57/59 HRC) and corrosion resistance. It takes very keen edges that resist micro-chipping.
    • Best for: High-end pocket knives (EDC), adventure knives and pieces that call for a clean, precise cut.

    4. Tactical toughness: 420 stainless steel

A very resilient steel that stands up to the elements, used for specific high-impact pieces.

    • Properties: Lower hardness than the steels above (50/53 HRC), which makes it extremely resistant to breaking under torsion or impact. It is virtually rust-proof.
    • Best for: Throwing knives, diving tools and low-maintenance tactical knives.
  • A high-quality knife is a tool for life, but how long it lasts depends on how you look after it, especially when technical steels are combined with natural handle materials.

    1. Cleaning and drying (essential for natural materials)

    • Wash by hand: Clean the blade and handle with warm water and mild soap. Never use the dishwasher: extreme heat and harsh detergents are lethal to steel and wood.
    • Mind the porosity: If your Cudeman has wood, antler or bone scales, avoid submerging or soaking them. These materials are porous; moisture can make them swell, crack or come away from the knife frame.
    • Dry immediately: Dry the whole knife with a soft cloth straight after washing. Make sure no moisture is left around the rivets or joints.

    2. Lubrication and protection

    • The blade: If you are going to store the knife, apply a thin coat of mineral oil (or camellia oil) to the steel. This creates a water-repellent barrier against ambient humidity, which matters even with stainless steels.
    • The handle: For natural wood handles, apply a little linseed oil or beeswax from time to time. It nourishes the material, seals the grain and stops it drying out or accidentally absorbing water.

    3. Storage and leather sheaths

    • Leather is organic: Leather sheaths absorb moisture. Don't store the knife inside its sheath for long periods of inactivity, as the leather tanning and trapped moisture can cause pitting on the steel.
    • Sheath care: Condition the leather regularly with horse grease or a dedicated leather cream. A supple, well-conditioned sheath protects your tool better and keeps the leather from cracking over time.

Golden rule: A Cudeman knife isn't ruined by use, but by neglect. Clean it, dry it and store it separately if you won't be using it soon.

  • Cudeman offers a lifetime warranty against any manufacturing or material defect.

Important: The warranty does not cover natural wear from use, or damage caused by misuse of the tool (such as extreme batoning with models not designed for it, throwing the knife or using it as a pry bar).
Items made with natural materials (wood, antler) or special resins (Juma) may show inherent differences in grain and colour compared with the photos. These cosmetic variations are not a manufacturing defect and are therefore not covered by the warranty or eligible for return.
