Cudeman Ibérico Ham Carving Knife: Albacete precision comes to haute cuisine

The art of precision slicing calls for a tool that feels like a natural extension of your arm, and the Cudeman Ibérico ham carving knife was born to deliver on that promise. As our first venture into the world of haute cuisine, we have poured all of our experience in sporting cutlery into a piece designed specifically for carving ham, where flexibility, balance and edge retention are not optional — they are essential to achieve that perfect, translucent slice that defines a true master carver.

Why this Cudeman is right for you

  • Absolute thickness control: The blade geometry allows controlled flexibility, adapting to the shape of the ham leg without wandering off line.
  • Professional hygiene and durability: The white Micarta handle is completely non-porous, withstanding intensive kitchen use without absorbing odors or bacteria.
  • Ergonomic balance: The handle design reduces fatigue during long carving sessions and provides a secure resting point for the thumb.
  • High-end aesthetics: The contrast between the white Micarta and the red liner brings a modern elegance that stands out in professional kitchens and live carving events alike.

Steel and edge performance

For this model we selected Sandvik 12C27 steel, a material recognized worldwide in high-performance cutlery for its balance of hardness and corrosion resistance. We added practical granton dimples so every cut is optimal and the ham releases from the blade with ease. At 59-60 HRC, this steel takes an extremely fine edge with superior edge retention, letting you work through several hams before it needs honing. What you can expect is a smooth glide and a clean cut that respects the texture of the marbled fat, avoiding any tearing of the lean meat.

Construction and strength

Although its profile is slim and elegant, the Cudeman Ibérico ham carving knife retains the structural solidity our brand is known for. Its full tang construction guarantees supreme integrity compared with conventional injection-molded ham knives. Keep in mind that, as a precision tool designed for slicing soft tissue, it is not meant for prying or for striking hard bones or frozen surfaces — uses that could compromise the integrity of its fine edge.

Handle and control in real conditions

Carving ham often means working with hands lightly coated in the product's natural fat. That is why the white Micarta handle with red liners is the ideal technical choice: it delivers a firm, secure grip even in these conditions, preventing dangerous slips. Its ergonomic design adapts to different grip styles, allowing both hobby and professional carvers to keep a straight, steady stroke without straining the wrist.

Use cases

  • Professional events and tastings: Ideal for showing off a prestigious tool that delivers impeccable results in front of the most demanding clients.
  • Gourmet home use: The ultimate tool for enthusiasts who want to treat an Iberian ham at home with the respect and technique it deserves.
  • Technical kitchen work: Its length and flexibility also make it ideal for filleting large fish or white meats that call for clean, single-pass cuts.

Care and maintenance

  • Always hand wash with warm water and a mild soap after each use, avoiding the dishwasher to protect the steel's temper.
  • Dry immediately with a soft cloth to prevent limescale marks or residual moisture on the steel's surface.
  • Store the knife in a dry, safe place, preferably in a ham holder or protective sheath, so the edge never knocks against other utensils.
  • Maintain the edge with regular passes on a quality honing steel to realign the metal without unnecessarily wearing down the blade.

The Cudeman Ibérico ham carving knife (701-B) is not just a knife — it is the result of decades of knife-making tradition applied to gastronomy. A reliable, balanced tool built to last that will elevate your carving technique to a professional level.

Frequently Asked Questions

Popular questions from our customers

  • Every Cudeman product is designed and made entirely in Albacete, Spain. The brand has more than 38 years of experience, combining the traditional craftsmanship of Albacete cutlery with the latest technology (such as laser cutting and CNC machining). When you buy a Cudeman, you are getting a product with a designation of origin that guarantees quality and know-how.

  • 1. Premium steels: Böhler N695 / N690Co

The benchmark steels in our high-end range. Böhler stands for purity and Austrian engineering.

    • Properties: High hardness (58/61 HRC), excellent corrosion resistance and superior edge retention thanks to their high chromium and cobalt content (in the case of N690Co).
    • Best for: Extreme survival and bushcraft knives (such as the famous MT series or the Boina Verde), built to withstand heavy use without losing their edge.

    2. The gold standard: Molybdenum Vanadium (MoVa)

The quintessential steel of Spanish cutlery, prized for its excellent structural balance.

    • Properties: Reaches 54/56 HRC. Its greatest strengths are toughness (impact resistance) and how easy it is to resharpen in the field, even with basic stones.
    • Best for: Hunting, dispatch and general-purpose knives. The all-terrain steel that never lets you down in the field.

    3. Swedish precision: Sandvik 12C27 / 14C28N

Very fine-grained stainless steels made in Sweden, ideal for anyone after a razor-sharp edge.

    • Properties: 14C28N in particular offers a masterful balance between hardness (57/59 HRC) and corrosion resistance. It takes very keen edges that resist micro-chipping.
    • Best for: High-end pocket knives (EDC), adventure knives and pieces that call for a clean, precise cut.

    4. Tactical toughness: 420 stainless steel

A very resilient steel that stands up to the elements, used for specific high-impact pieces.

    • Properties: Lower hardness than the steels above (50/53 HRC), which makes it extremely resistant to breaking under torsion or impact. It is virtually rust-proof.
    • Best for: Throwing knives, diving tools and low-maintenance tactical knives.
  • A high-quality knife is a tool for life, but how long it lasts depends on how you look after it, especially when technical steels are combined with natural handle materials.

    1. Cleaning and drying (essential for natural materials)

    • Wash by hand: Clean the blade and handle with warm water and mild soap. Never use the dishwasher: extreme heat and harsh detergents are lethal to steel and wood.
    • Mind the porosity: If your Cudeman has wood, antler or bone scales, avoid submerging or soaking them. These materials are porous; moisture can make them swell, crack or come away from the knife frame.
    • Dry immediately: Dry the whole knife with a soft cloth straight after washing. Make sure no moisture is left around the rivets or joints.

    2. Lubrication and protection

    • The blade: If you are going to store the knife, apply a thin coat of mineral oil (or camellia oil) to the steel. This creates a water-repellent barrier against ambient humidity, which matters even with stainless steels.
    • The handle: For natural wood handles, apply a little linseed oil or beeswax from time to time. It nourishes the material, seals the grain and stops it drying out or accidentally absorbing water.

    3. Storage and leather sheaths

    • Leather is organic: Leather sheaths absorb moisture. Don't store the knife inside its sheath for long periods of inactivity, as the leather tanning and trapped moisture can cause pitting on the steel.
    • Sheath care: Condition the leather regularly with horse grease or a dedicated leather cream. A supple, well-conditioned sheath protects your tool better and keeps the leather from cracking over time.

Golden rule: A Cudeman knife isn't ruined by use, but by neglect. Clean it, dry it and store it separately if you won't be using it soon.

  • Cudeman offers a lifetime warranty against any manufacturing or material defect.

Important: The warranty does not cover natural wear from use, or damage caused by misuse of the tool (such as extreme batoning with models not designed for it, throwing the knife or using it as a pry bar).
Items made with natural materials (wood, antler) or special resins (Juma) may show inherent differences in grain and colour compared with the photos. These cosmetic variations are not a manufacturing defect and are therefore not covered by the warranty or eligible for return.
